You can make miniatures like you see HERE (http://kraftfoods.com/main.aspx?s=recipe&m=recipe/knet_recipe_display&u1=keyword&u2=graham%20cracker%20house&u3=**2*4&wf=9&recipe_id=54109). Or you can go bigger like the attached photo. It's one I did a few years ago. You use shoeboxes or whatever for the structure and "glue" it all together with decorater's frosting (or tube frosting you buy at the store). It's great for kids and everyone. Course, you can't eat these like you can real gingerbread, except for the candies..those you can eat ;)
Decorater's frosting:
2 large Egg whites
1/8 tsp. cream of tartar
2 tsps. water
3 cups icing sugar [powdered/confectioners sugar]
Instructions
With an electric mixer, beat egg whites, cream of tartar, and water until frothy.
Mix in powdered sugar; beat on high speed until icing is stiff, 5 to 10 minutes.
Use, or cover up to 8 hours.
Makes about 1-1/2 cups.
