Since it's the holidays and we sometimes need a LOT of something, I thought I'd post this. These are my family's favorites and do not take a long time to make. This recipe is half the original, but I don't have a pan big enough to mix the original amounts in,sooo.....lol
1 C brown sugar
1 C white sugar
1 C oil
2 eggs
1/2 t. vanilla
2 C flour
1 t. soda
1/4 t. salt
1 C oatmeal (quick-cooking)
1 C coconut
1/2 C chopped nuts
1/2 C raisins
2 C Special K (You can use corn flakes or rice krispies, but they don't work as well as Special K, imo)
In extra large bowl, cream sugars, oil, eggs, and vanilla. Add remaining ingredients, mixing after each addition. Drop by spoonfuls on greased cookie sheet. Bake at 350 for 10 to 12 minutes until light tan. Makes about 5 dozen cookies
Note: When you stir in the cereal, you'll think you're going to crumble it all up because the dough is so stiff. Sometimes I resort to using my hands to blend it better at this stage.
